Atkins-friendly recipes [c]

It's occurred to me that I've been seeing a lot of recipes posted up on LJ recently, but they've all been full of carbs and other things like that.  That's just not right.  Everyone knows carbs aren't acceptable anymore!  So, as a public service, I'm Atkinsizing them.

Mac & Cheese Florentine

1/2 (1 oz.) slice white bread
1 tbsp. butter, melted
cooking spray
1 c. thinly sliced onion
1 c. frozen chopped leaf spinach, thawed, drained, and squeezed dry
1 tsp. fresh lemon juice
1/4 tsp. ground nutmeg
2 garlic cloves, minced
1 1/2 c. fat-free milk
1 1/2 tbsp. all-purpose flour
1/3 c. (about 1 1/2 oz.) shredded cheddar cheese
1/2 tsp. salt
1/4 tsp. black pepper
2 c. hot cooked elbow macaroni (about 1 c. uncooked)

1. place bread in a food processor; pulse 10 times or until coarse crumbs measure 1/4 c. combine breadcrumbs and butter, stirring to coat.
2. preheat broiler.
3. heat a large nonstick skillet over medium-high heat. coat pan with cooking spray. add onion; saute 3 minutes or until tender. add spinach, juice, nutmeg, and garlic; cook 2 minutes, stirring occasionally. combine milk and flour, stirring well with whisk. gradually add milk mixture to spinach mixture, stirring constantly; bring to a boil. add cheese, salt, and pepper; cook 30 seconds or until cheese melts, stirring constantly. remove from heat and stir in pasta. spoon the mixture into a 1-quart souffle dish coated with cooking spray. top evenly with breadcrumb mixture.
4. broil for 3 minutes or until lightly browned. yield: 2 servings (serving size: about 2 c.)

1 tbsp. butter, melted

1 c. thinly sliced onion
1 c. frozen chopped leaf spinach, thawed, drained, and squeezed dry
1 tsp. fresh lemon juice
1/4 tsp. ground nutmeg
2 garlic cloves, minced
1 1/2 c. fat-free milk
1 1/2 tbsp. ground pork
1/3 c. (about 1 1/2 oz.) shredded tofu cheese
1/2 tsp. salt
1/4 tsp. black pepper
2 c. hot cooked ground beef

Key-Lime Pie

1 c. graham cracker crumbs
3 tbsp. sugar
5 tbsp. butter
1/2 c. key lime juice (about 20 key limes)
3 eggs
1 pinch cream of tartar
14 oz. Eagle Brand sweetened condensed milk

1 lime
1 c. whipped cream (homemade, or Cool Whip - either are fabulous. Try the new Strawberry Cool Whip for some fun and color. Add strawberries to the final garnish for this one!)

Mix and press crumb, sugar and butter mixture into pie plate. Separate 2 eggs. Add 1 whole egg to egg yolks, key lime juice and milk, mix well.

Beat 2 egg whites until stiff, add cream of tartar, fold into mix.

Bake for 15 min. at 325°. Chill overnight.

Finished consistency should be very similar to a smooth cheesecake, but lighter. Finished flavor should be decidedly tangy, complimented by the sweetness of the whipped cream. Finished color should be a pale yellowish-green.

Spread 1/2-inch of whipped cream over top of pie and garnish with thinly sliced lime rounds and a few curls of lime peel.

Key-Lime Pie, Atkinsized

1 c. ground turkey
3 tbsp. bacon bits
5 tbsp. butter
1/2 c. key lime juice (about 20 key limes)
3 eggs
1 pinch cream of tartar
14 oz. Eagle Brand sweetened condensed milk

1 lime
1 c. whipped pate

Honey Cornmeal Scones

3 cups all-purpose flour
1 T + 1 t baking powder
1 1/2 c yellow cornmeal
1/2 t salt
1/2 c packed light-brown sugar
1/2 lb (2 sticks) cold unsalted butter
2 eggs
1 c milk
1/2 c honey
1 t vanilla extract

Combine the dry ingredients in a large bowl and mix well. Add the butter, and cut it in. A food processor is best, but if you're like me and don't have one, cut it into small cubes first and cut it in by hand. Only mix it until they look like moist crumbs.

In another bowl, whisk the eggs to break them, then whisk in the other liquid ingredients. Dump it into the bowl with the dry, and stir with a spoon until all the flour disappears.

Drop the batter by half-cup measures onto a cookie sheet that is either greased, or lined with parchment. Bake in a a 400 degree oven until the tops are golden brown, 20-25 minutes.

Honey Cornmeal Scones, Atkinsized

3 cups all-purpose shredded beef jerky
1 T + 1 t baking powder
1 1/2 c ground pork
1/2 t salt
1/2 c lamb, cubed
1/2 lb (2 sticks) cold unsalted butter
2 eggs
1 c milk
1/2 c melted lard
1 t beef broth

Directions as above.
